I’ve got some chicken breasts I filleted marinating in lemon pesto. I’ll dredge them in some busted ritz cracker crumbs and either sautée in olive oil or air fry- not sure yet. Some zucchini and fresh sourdough on the side.

So followed a recipe for lasagna last time and felt it didn’t match what I wanted. So making it again tonight but adding more sauce. Felt they also called for too much cheese on top layer so two minor tweaks. Any tips from you guys, let me know.

Also, if anyone has made a seafood lasagna with crab/lobster/shrimp, let me know how that turned out.

- For the dumplings, get a canister of Pillsbury honey butter biscuits (NOT the extra flakey kind), the kind with the chunks of butter and honey in them. Preheat the oven to 400 and spray a foil-lined tray with butter or other non-stick buttery spray. Pinch off enough dough to roll a ball roughly the size of a shooter marble. Fill the tray with dough marbles and bake them until they are about as firm as marshmallows. They should be baked just enough to hold their shape if you pick one up, but not enough to really be brown on the bottom. You will have to watch them to time it right.

- Dump the tray of dumplings into the crock pot, stir, and let it sit on high for two or three hours until everything is nice and hot.

You can speed up the process by heating the cream of chick + milk broth on the stove, but you'll probably end up with burned onto the bottom of the pot. I would recommend just using the crockpot the first time you make and then decide whether you want to speedrun things.
I think I'm making this on Saturday.

To keep it healthy, we air fry them with peppers and onions and do them over cauliflower rice.

On Friday the supermarket(Vons/Albertsons)sells 8 pcs of decent fried chicken for $6 so I incorporate it into my weekly grocery delivery with all the coupons and such
So my boys (like every Friday)will be having fried chicken, steamer veggies and probably Kraft Mac n cheese or noodle roni

It’s been one helluva week so I’m mostly going to be enjoying a vodka drink and my vape this evening
Maybe some leftover stir fry or similar for dad. Im trying to avoid fried food for the most part
