Smoked a slab of baby back and a slab of St Louis ribs yesterday. Also made Mac and cheese to go a long with it. No cooking for me today.

I grilled and smoked yesterday. I smoked some pork ribs for 5 hrs and bbq chicken for 2 hrs. I just have a regular grill. I smoke it by using indirect heat. I put the mesquite charcoal and mesquite wood on one side of grill. I put the pork ribs on the other side of the grill on parchment paper so the juices dont drip down on the grill and dry out the slab.

I have to say the ribs came out great. They had that nice smoke ring to them as well. They were moist and juicy still. I just put salt and pepper on them and later on put a little bit of bbq sauce on them. Everyone liked them and said they were great. I was actually surprised they came out as good, lol. I also made the tomahawk steak and that came out medium. Also made some fajitas and Earl Campbells beef hot links. Wife made charro beans and rice and a couple of different salsas as well. So it was a good day yesterday.

A few added visitors dictates some legs n thighs and a pack of brats be added to the menu out here. Better to have leftovers than leave em hungry.

Going to grill my T-Bones soon. My wife and kids make me ruin theirs so they can have they done medium well to well done. I should just get them london broil for them.

I smoked my first brisket overnight and had it for dinner tonight. I'm sorry to the Texas crowd but I prefer Boston Butt and pulled pork to the brisket lol.

poker buddies $20 each, day to cook, meat cutter gives us the biggest he can---sunday funday of beer, cards, and laughs. Its golden.

I’d agree that a properly seasoned and smoked brisket is the pinnacle of smoked meat.
Followed by St. Louis cut spareribs and finally bone in chicken thighs.
Gotta admit that that turkey breast up there has me jonesing for a big sammich on sourdough.

Absolutely loving this smoker.

Did a Sirloin Roast and a 9lb Pork Butt last weekend.
Did a turkey breast and three turkey legs this weekend.
Then put some “firecracker” sausage (ridiculously spicy and so good) on the grill after removing the turkey and let it slow cook as the grill cooled.

Already looking forward to next weekend!
