You're missing the point. The point is that the NM-MT 8 grade is a range, from NM 7 to Mint 9. If centered, that's the key, most cards graded NM-MT 8 can range from 7 one day to 9 the next. If you don't know this through your own experience, either you haven't been collecting very long or haven't graded (and re-graded) many cards.
